1 peça de lagarto (aprox. 1,6kg)

sal e pimenta-do-reino a gosto

1 colher de sopa de azeite

6 dentes de alho

cheiro-verde a gosto

1 tomate

1 folha de louro

Para o molho madeira

1 colher de sopa de manteiga

2 colheres de sopa de farinha de trigo

2 colheres de sopa de molho de tomate

250 ml de vinho tinto seco

200g de champignon

Para acompanhar

10 batatas bolinha

10 cebolas pérola

15 tomates cereja

Modo de preparo

Cozinhe as batatas bolinha em água fervente até ficar al dente.

Escorra e leve ao forno médio, junto com o tomate e a cebola, até dourar. Reserve.

Tempere toda a peça de lagarto com sal e pimenta-do-reino.

Sele o lagarto em uma a de pressão bem quente com um fio de azeite.
